Our Wisconsin Garlic Farm

Our farm is in the Chippewa Valley of Northern Wisconsin, exclusively growing Garlic "Hardneck varieties" for seed and eating. This garlic farm is my passion, and is taken care of from planting to harvest and beyond with a great amount of care and attention. This garlic has been raised using no chemicals and only sustainable farming practices. Garlic Farming is done with a lot of manual labor, "mainly myself". The garlic seed is planted by hand, harvested with pitch fork, cleaned and graded, again with caring hands. This year we planted over 30,000 plants, all by hand. You may notice in some of pictures we use old Sears Suburban lawn tractors for much of our work. I really enjoy working on these machines and find they are really tough. Plus it really makes my wife laugh when she sees me riding them.

We are taking Pre-Harvest orders for Garlic Scapes, Seed and Culinary Garlic now. Garlic bulb quantities will be limited at first then updated at harvest, about mid July.

What is Elephant Garlic?

Sceintific name:  (Allium ampeloprasum)

Is the source of much confusion and the issue of elephant vs "true garlic".  Many people are attracted to elephant garlic and buy it simply because of its size. They assume that it must be more stronger in flavor than ordinary varieties.  In fact the opposite is true.

Elephant garlic is closely related to the leek than to the garlic. The bulbs are very large and a single bulb can somtimes weigh over a pound each.  A single clove of elephant garlic can often be as large as a whole bulb of ordinary garlic. That's a lot of garlic - but is it a lot of flavor?

In terms of strength, elephant garlic is to garlic what leeks are to onions. The flavor is much less intense and sweeter.

We are dedicated to use the best practices and information available in our garlic growing process. We focus on growing Garlic having the best flavors and consistent quality, while using Chemicals free practices. These practice have always resulted in garlic that is as large as the individual garlic cultivars allow.

We do have some secret garlic growing practices that we may just share with you.

We are currently developing a new procedure to cure garlic that will enable garlic farmers to reduce labor and supply a more consistent garlic for consumption.

Garlic Varities

Garlic(Allium sativam) has two sub-species softnecks and hardnecks. We grow only hardneck garlic.

Hardnecks:
The hardneck refers to the scape that later produces a flower. They are favored by chefs for having exceptional flavor and large easy to peel garlic cloves.

Softnecks:
Almost all supermarket garlic is a softneck variety. This is because softneck garlic is easier to grow and plant mechanically.  Softneck garlic is recognized by the white papery skin and an abundance of small cloves, often forming several layers around the central core.

Garlic Scapes are available in mid May through the end of June and will ship immediately at harvest.

Garlic will be available for shipment about September 1st.

Garlic Seed/Eating Garlic

Seed garlic and culinary garlic are the very same thing. You can plant any of our garlic, and you can eat any of it, too. Growers look for the largest cloves, and they seek out the largest bulbs available;  "you reap what you sow".  In kitchens, on the other hand, cooks often prefer smaller cloves to more easily control the amount of garlic in each dish. Most growers will charge a premium for larger garlic.  Our Seed garlic is over 2" in diameter and Eating/Culinary Garlic is under 2".  Do not plant cloves from the grocery store. They may be treated to make their shelf life longer which reduce the germination rate.
