Garlic Scapes


If you have a hardneck variety, in about June, expect to see a tall scape unfurling up from the garlic. I usually wait until the scapes are 8-12″ long and then snip them off.  They are superbly edible and taste like a garlic greens. We use them like onion chives.  Great in stir fries or grilled with asparagus. Also make great pesto.   Let us know what your favorite garlic scape dish is.
